Soft Oatmeal Cookies

Here is a yummy recipe for soft oatmeal cookies that I think you're going to love. Easy to make and very little prep time involved. 

Start by softening 1 cup of butter. I used stick butter and just put it in the microwave for about 25 seconds. Mine came out looking like this and worked just fine.




Add 1 cup of white sugar to your butter.




Add 1 cup packed brown sugar to your butter and white sugar.




Cream the butter, sugar and brown sugar together for a few minutes.




Add 2 eggs, one at a time, creaming the mixture between each egg.




Cream the butter, sugars and eggs until it is smooth and creamy.




Add 1 teaspoon of vanilla and cream some more.




In a separate bowl mix 3 cups of all purpose flour, 1 teaspoon baking soda, 1 teaspoon salt and 1 1/2 teaspoons cinnamon. Mix well with a fork.




Add your flour mixture to your butter mixture a little at a time. I put about 1/3 the flour mixture in at a time and mix well.




Here's another one of me mixing and pouring. My daughter, Alyssa, helped me and was able to take pictures :)




Mix well until it's smooth and creamy.



Add 3 cups of rolled oats - add one at a time and mix well between cups.



Your mixture will look like this. At this point, cover with plastic wrap and put in the refrigerator to chill for about an hour.

When your dough is chilled for about an hour, drop by spoonfuls on a greased cookie sheet. P.S. As you can tell, this is my favorite cookie sheet :) It needs to be retired, but I haven't found one to replace it yet. Can't hardly beat an Oneida.



When your cookie sheet is full, bake at 350 degrees for about 10 minutes. 



Yummy! This recipe makes about 3 dozen soft and yummy oatmeal cookies.
