Potato Pinwheel Recipe

I grew up eating this at Christmas and continue to make it to this day. Back in the day, we had to boil our potato, but now you can use a microwave to soften it. Believe it or not, candy made with potatoes is really GOOD!

1 medium sized potato
2 1/2 to 3 1/2 cups powdered sugar
Creamy peanut butter

Boil or microwave potato to soften ~ mash thoroughly while still hot
Add powdered sugar, a small amount at a time, until potato mixture is the consistency of dough (will get thin before it starts getting thicker)
Roll out onto surface covered with powdered sugar ~ needs to be about 1/4" thick and oblong shaped
Spread evenly with peanut butter
Roll into a 'pinwheel'
Chill 5-6 hours or overnight in refrigerator
Slice into 1/4" to 1/2" slices
