My son, Daniel, is home for a visit and I try to fix some of his favorites while he's home. When I was in Jr. High, a friend's mom used to make these for us....they called them 'Talupas', so that's what I've always called them.
Ingredients:
Flat Flour Tortilla shells
Lean Ground Beef
Taco Seasoning (I prefer McCormick)
Refried Beans
Lettuce
Tomato
Green Stem Onions
Shredded Cheese
Brown the ground beef and drain ~ prepare taco seasoning according to package directions
Heat refried beans thoroughly
Chop veggies while ground beef and beans are cooking
Heat tortilla shells in microwave (approximately 30 seconds for 2-3 shells)
Place tortilla shell on plate ~ layer refried beans, ground beef, lettuce, tomato, green onion and cheese ~ of course, you can add whatever 'taco like' toppings you prefer.
Use a fork to eat ~ gonna be a mess if you try to pick it up!
**use remainder of tortilla shells for breakfast burritos the next morning or bean and cheese burritos at lunch
