Rice Pilaf Chicken & Chashews Recipe
This recipe was invented on one of those days that I didn't want to go to the store, so I opened up the cabinets and this is what I had to work with. Turned out great and still fix it quite often.
Ingredients:
Skinless Boneless Chicken Breasts
Rice A Roni Rice Pilaf
Cashews
Rinse and cut chicken into bite size pieces - brown in a skillet with olive oil
Prepare Rice A Roni according to package directions in an electric skillet
**Use one box of Rice A Roni for 1 or 2 chicken breasts; 2 boxes of Rice A Roni with package of 3 or 4 chicken breasts
After rice vermicilli is browned and you add the water to the rice add the chicken as well and finish cooking the rice
When rice and chicken are about halfway done, add cashews and finish cooking - this allows the cashews to soften slightly and absorb some of the rice/chicken flavor

Taco Salad Recipe
Here's an easy and excellent taco salad recipe - most requested by my kids' friends when they were growing up.
Ingredients:
Head of Lettuce
2 Tomatoes
5 or 6 Green Stem Onions
1 lb. ground turkey (or ground beef if you prefer)
McCormick Taco Seasoning
1 Bag Taco Doritoes
1 package shredded cheddar cheese
1 bottle Otts Famous Dressing
Brown turkey or burger in a skillet - drain and add taco seasoning according to package directions
While ground meat is cooking, chop lettuce, tomato and green onion - put all chopped ingredients in a large bowl (take a pretty big one!)
Add seasoned ground meat
Add shredded cheese - if you do it in this order, the cheese melts slightly
Open bag of Doritos and cruch whole bag with your hands - add to bowl of veggies and meat
Put whole bottle of Otts on top
Mix it all up - I usually use two spatulas and just keep turning and mixing
**I've tried other taco chips and generic dressing and just don't get the desired taste, so I do recommend these specific ingredients.

Potato Soup Recipe
Potato Soup Recipe
Here's a great potato soup recipe that even my kids loved! Easy and you probably already have the ingredients on hand. Note: some people like to add celery and other ingredients, but I prefer this simple recipe, but feel free to dress it up however you want.
Ingredients:
Potatoes
Onions
Milk
Butter
(pretty simple, huh?)
Peel and cut potatoes like you're making mashed potatoes - approximately 1" squares (don't get too picky on the shape)
Boil in water like you're making mashed potatoes - don't over boil as they'll be mushy
While potatoes are boiling, dice up a small yellow onion and put in with potatoes to boil
When potatoes are soft, drain nearly all of the water from them, leaving just a little in the bottom.
Put enough milk in the pan to cover potatoes, about 1/2 stick of butter and add the onions
Slowly bring to a boil, stirring often to keep milk from scorching - keeping the small amount of water in the pan helps to prevent scorching.
Turn to low and simmer for about an hour - stir often
When there is about 15 minutes left, make some grilled cheese sandwiches to go along with the soup. I usually use regular American cheese for the sandwiches as the Borden Fat Free cheese doesn't melt real well.
I like to add enough crackers to my bowl of soup to absorb most of the juice and then add salt (it will need salt!) and a lot of pepper.

1 can green beans (drained)

Quick & Easy Chili Recipe
Here's my recipe for a quick and easy chili that I make when I want chili, but don't have time to 'do it right'. This recipe is my own invention and is nearly as good as my regular chili.
Ingredients:
1 lb. ground turkey (or ground beef if you prefer)
1 can Bush's Chili Magic Traditional
1 can Bush's Chili Magic Texas Style
2 cans chili beans
1 can kidney beans
1 diced onion
Brown the ground turkey (or beef) - drain and add to crock pot
Dump all the cans in there and mix
Add the onion and mix
Cook on high crockpot setting for about an hour, then turn to simmer for a few hours - serve!
As an alternative, if I am in a big hurry, I make this in a pot on the stove in about an hour - just bring to a boil and then turn to low to simmer for as long as possible.
Also, I make this often and freeze for quick meals. I'll make a crock pot of chili, then divide into those single serving Glad freeze-n-serve containers. I also grab a bag of Fritos and divide into quart size freezer bags and stash those in the deep freeze or freezer as well. Fritos will keep for a long time and will not get soggy when you take them out.
When you need a quick meal, just grab a bag of Fritos and a container of chili. Thaw the chili in the microwave, then put Fritos on a plate or in a bowl and top with thawed and heated chili.
Top with cheese or onions if you want!

I think I found this recipe for chicken parmigiana on All Recipes at one time. Maybe. Anyway, I found it somewhere and we love it:

2 ounces dry bread crumbs
2 skinless, boneless chicken breast halves
3/4 (16 ounce) jar spaghetti sauce
2 ounces shredded mozzarella cheese
1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees F (175 degrees C).
Lightly grease a medium baking sheet.

Dip chicken into egg, then into the bread crumbs.
Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.

Talupas Recipe
My son, Daniel, is home for a visit and I try to fix some of his favorites while he's home. When I was in Jr. High, a friend's mom used to make these for us....they called them 'Talupas', so that's what I've always called them.
Ingredients:
Flat Flour Tortilla shells
Lean Ground Beef
Taco Seasoning (I prefer McCormick)
Refried Beans
Lettuce
Tomato
Green Stem Onions
Shredded Cheese
Brown the ground beef and drain ~ prepare taco seasoning according to package directions
Heat refried beans thoroughly
Chop veggies while ground beef and beans are cooking
Heat tortilla shells in microwave (approximately 30 seconds for 2-3 shells)
Place tortilla shell on plate ~ layer refried beans, ground beef, lettuce, tomato, green onion and cheese ~ of course, you can add whatever 'taco like' toppings you prefer.
Use a fork to eat ~ gonna be a mess if you try to pick it up!
**use remainder of tortilla shells for breakfast burritos the next morning or bean and cheese burritos at lunch

1920s Hunter's Pudding Recipe
Here's a recipe for Hunter's Pudding from 1922
