Soft Oatmeal Cookies

Here is a yummy recipe for soft oatmeal cookies that I think you're going to love. Easy to make and very little prep time involved. 

Start by softening 1 cup of butter. I used stick butter and just put it in the microwave for about 25 seconds. Mine came out looking like this and worked just fine.




Add 1 cup of white sugar to your butter.




Add 1 cup packed brown sugar to your butter and white sugar.




Cream the butter, sugar and brown sugar together for a few minutes.




Add 2 eggs, one at a time, creaming the mixture between each egg.




Cream the butter, sugars and eggs until it is smooth and creamy.




Add 1 teaspoon of vanilla and cream some more.




In a separate bowl mix 3 cups of all purpose flour, 1 teaspoon baking soda, 1 teaspoon salt and 1 1/2 teaspoons cinnamon. Mix well with a fork.




Add your flour mixture to your butter mixture a little at a time. I put about 1/3 the flour mixture in at a time and mix well.




Here's another one of me mixing and pouring. My daughter, Alyssa, helped me and was able to take pictures :)




Mix well until it's smooth and creamy.



Add 3 cups of rolled oats - add one at a time and mix well between cups.



Your mixture will look like this. At this point, cover with plastic wrap and put in the refrigerator to chill for about an hour.

When your dough is chilled for about an hour, drop by spoonfuls on a greased cookie sheet. P.S. As you can tell, this is my favorite cookie sheet :) It needs to be retired, but I haven't found one to replace it yet. Can't hardly beat an Oneida.



When your cookie sheet is full, bake at 350 degrees for about 10 minutes. 



Yummy! This recipe makes about 3 dozen soft and yummy oatmeal cookies.

Million Dollar Fudge Recipe

Million Dollar Fudge Recipe

Ingredients:

4 1/2 cups sugar
1 large can evaporated milk
2 sticks butter or margarine
18 oz. chocolate chips
1 1/2 tsp. vanilla
2 cups broken nuts

Bring sugar and milk to a boil in a saucepan - boil, stirring constantly for 10 (ten) minutes
Combine butter and chocolate chips in a large pan
Add boiling sugar mixture to butter and chocolate chip pan
Beat quickly until smooth and creamy
Add vanilla and nuts
Pour into an 8 X 12 inch pan - cool

Chocolate Fudge Supreme Recipe

This is an old favorite for chocolate fudge supreme - great recipe!

Ingredients:
2 small packages chocolate chips
1 large jar marshmallow cream
2 sticks margarine
4 cups sugar
1 large can evaporated milk
1 cup chopped nuts (optional)

Mix chocolate chips and marshmallow cream in a bowl.
Mix margarine, sugar and milk in a saucepan and bring to a boil for 9 minutes
Pour over chocolate chip mixture
Beat until glossy
Stir in nuts
Turn into buttered pan and cool

**original recipe calls for cutting into squares, wrapping each square in waxed paper and refrigerating

Red Velvet Cake Recipe

Here's a great recipe for Red Velvet Cake

Ingredients:
1/2 cup shortening
1 1/2 cup sugar
2 eggs
2 oz. red food coloring
2 Tbsp. cocoa
1 tsp. salt
2 1/4 cups flour
1 cup buttermilk
1 tsp. butter flavoring (optional)
1 tsp. vanilla
1 tsp.  baking soda
1 Tbsp. vinegar

Cream shortening, sugar and eggs.
Make paste with food coloring and cocoa; add to mixture
Add salt and flour with buttermilk, butter flavororing and vanilla
Alternately add baking soda and vinegar - do not beat hard, just blend
Pour into two 8 inch round cake pans (greased and floured)
Bake 30 minutes at 350 degrees

Frosting Ingredients:
3 Tbsp. flour
1 cup milk
1 cup sugar
1 cut butter
1 tsp. vanilla

Cook flour and milk on low heat until thick - cool
Cream sugar, butter and vanilla until fluffy
Add to flour-milk mixture and beat until mixture is like whipped cream

Frost cake when it's cool - keep cake cool so icing doesn't melt

Chocolate Cookie Sheet Cake Recipe

This is that great, thin sheet cake with the yummy frosting that your aunt or grandma used to make and bring to reunions!

Ingredients:
2 cups flour
2 cups sugar
1/2 tsp. salt
1 stick margarine
1/2 cup shortening (like Crisco)
1 cup water
3 Tbsp. cocoa
2 eggs well beaten
1 tsp. baking soda
1/2 cup buttermilk
1 tsp. vanilla
1 tsp. cinnamon (optional)
***see below for frosting recipe

Sift flour and measure.
Resift flour with sugar and salt
Place butter, shortening, water and cocoa in a saucepan and bring to a boil
Pour butter mixture over flour mixture
Combine eggs, bakind soda, buttermilk and vanilla in another bowl ~ add to above mixture and mix well
Pour into greased and floured shallow cake pan
Bake at 350 degrees for 20 minutes
Start frosting when cake has 5 minutes left to bake

Frosting Ingredients:
1 stick butter
3 Tbsp. cocoa
6 Tbsp. milk
1 box powdered sugar
1/2 cup chopped pecans
1 tsp. vanilla

Mix butter, cocoa and milk in a saucepan ~ place over low heat, but do not boil
Remove from heat
Add powdered sugar, pecans and vanilla ~ mix well
Frost cookie sheet cake as soon as it's out of the oven

Peanut Butter Fudge Recipe

Peanut Butter Fudge Recipe

This is an old fashioned recipe that requires cooking ~ no 'instant' on this one.

Ingredients:
1 cup light brown sugar
1 Tbsp. butter
3 Tbsp. sugar
1/2 cup milk
1 tsp. cornstarch
1 tsp. vanilla
1 8 oz. jar smooth/creamy peanut butter

Combine brown sugar, butter, sugar and milk into heavy saucepan. Cook to softball stage or 234 to 260 degrees on candy thermometer (can also check by dropping small amount into a cup of water ~ when it's at 'softball' stage, it will form a soft ball in the cold water)
Stir in cornstarch dissolved in small amount of water
Remove from heat
Beat well
Add peanut butter and vanilla and beat until smooth
Pour into glass baking dish and let set

Potato Pinwheel Recipe

Potato Pinwheel Recipe

I grew up eating this at Christmas and continue to make it to this day. Back in the day, we had to boil our potato, but now you can use a microwave to soften it. Believe it or not, candy made with potatoes is really GOOD!

Ingredients:
1 medium sized potato
2 1/2 to 3 1/2 cups powdered sugar
Creamy peanut butter

Boil or microwave potato to soften ~ mash thoroughly while still hot
Add powdered sugar, a small amount at a time, until potato mixture is the consistency of dough (will get thin before it starts getting thicker)
Roll out onto surface covered with powdered sugar ~ needs to be about 1/4" thick and oblong shaped
Spread evenly with peanut butter
Roll into a 'pinwheel'
Chill 5-6 hours or overnight in refrigerator
Slice into 1/4" to 1/2" slices

Dutch Apple Pie Recipe

Dutch Apple Pie Recipe

I think I could just eat the apple mixture on this and never actually put it in the pie shell and bake. My husband doens't really care for apple pie, but he LOVES this one!

Ingredients:
8 Jonathan apples, peeled and sliced
2 9" unbaked pie shells
1/3 cup sugar
1 tsp. cinnamon
Flour
Dash of salt
1/2 cup butter
1/2 cup packed brown sugar

Spread apples into pie shell ~ they'll be heaped up
Combine sugar, cinnamon, 1 tbsp. flour and salt ~ mix with a fork
Sprinkle sugar mixture over the apples in the pie shell
Combine butter, 1/2 cup flour and brown sugar ~ mix well
Sprinkle flour mixture over apples in pie shell
Cut up a few pats of butter to top off the pie
**you can bake 'open faced' or add the other pie shell over the top and cover with a few more pats of butter and sprinkle with cinnamon and sugar (cut a few holes in top pie shell to vent)

Bake in 350 degree oven for 25-35 minutes or until done

Christi's Sugar Cookie Recipe

Here's my sugar cookie recipe. I can honestly say that somebody walked a mile one day for these! (okay, she was pregnant and had a craving for them, but that's beside the point! ~ luv ya, S!)

Ingredients:
1 cup butter
1 cup sugar
2 eggs
1 Tbsp. milk
1 tsp. vanilla
3 cups flour, sifted
3 tsp. baking powder

Cream butter with a mixer
Add sugar to butter gradually and cream
Add eggs, milk and vanilla to butter/sugar ~ cream well
Add flour sifted with baking powder ~ mix well
Chill for 10 minutes in refrigerator

You can roll out and cut shapes or roll into balls and flatten slightly on (greased) cookie sheet ~ cookies come out with a cake like texture and are excellent

Grease baking/cookie sheet
Bake at 350 degrees for 10-15 minutes

*May be frosted or decorated when cooled
**Makes about 3 dozen cookies

Light Southern Pecan Pie Recipe

Light Southern Pecan Pie Recipe

I've tried several pecan pie recipes over the years, but just can't find one that beats this one ~ it always turns out great and is a family favorite on the holidays.

Ingredients:
1/3 cup butter
1/2 cup firmly packed brown sugar
1 cup light corn syrup (like Karo)
1 tsp. vanilla
3 eggs, slightly beaten
1 cup chopped pecans
1 9" unbaked pie shell (or make one from scratch)

Cream butter with mixer
Add brown sugar to butter gradually and cream ~ mixing well
Blend in syrup and vanilla thoroughly
Add eggs and pecans
Turn into pie shell

Bake at 450 degree oven for 10 minutes so that pie 'sets'
Reduce oven to 350 degrees and bake for another 25 minutes
Insert a knife into center of pie ~ if it comes out clean, it's done!

1920s Good Southern Cookie Recipe

Here's a recipe for 'Good Southern Cookies' from 1923

Ingredients:
1 cup butter
1 1/2 cups sugar
1 egg
1/2 cup sweet milk (or water)
1 tsp. grated nutmeg
2 'heaping' tsp's baking powder sifted with flour and enough flour to roll soft
*currants, raisins or shredded coconut may be added if desired

Cream butter and sugar

Add egg, milk nutmeg and baking powder (sifted with flour) to butter/sugar mixture ~ mix well

Add currants, raisins or coconut if desired ~ bake until done **I never put my oven over 350 degrees, so just keep checking until done

1920s Birthday Cake Recipe

Here is a recipe for birthday cake from 1923

Ingredients:
1 cup sifted pastry flour
1 tsp. cream of tartar
1 1/2 cups sugar
12 egg whites
1 tsp. vanilla

Sift pastry flour six times with cream of tarter

Sift sugar six times

Beat the 12 egg whites until stiff and dry ~ add the vanilla

Fold egg whites into sugar and then fold that into flour ~ do not beat, but use the folding motion until smooth

Bake in a "slow" oven for 45 minutes

1920s Plain Cake Recipe

Here's a recipe for a plain cake from 1922

1 cup sugar
1 1/2 cup sifted flour
3 level tsp. baking powder
1/2 tsp. salt
2 eggs
milk
5 Tbsp. well softened butter (but not melted)

Sift together sugar, flour, baking powder and salt

Break two eggs into one cup measure and finish filling measuring cup with milk (will have 2 eggs and however much milk to fill to one cup)

Add milk/egg mixture to dry ingredients ~ add butter

Beat hard until smooth and creamy

Bake at 350 until done (**springs back when touched or toothpick inserted in middle comes out clean**)

1920s Sweet Potato Pie Recipe

Here's a recipe for sweet  potato pie from 1922

Cook 6 large sweet potatoes with a little salt

When cooked, remove from fire, peel and mash smooth.

In a separate dish, beat three eggs ~ add to the eggs, three tablespoons corn starch and a quart of good rich milk and a piece of butter the size of a walnut.

Mix well with the mashed potatoes and put in crust and bake.

A meriungue may be added if desired.

No Bake Cookies Recipe

This recipe is for my son, Daniel. I don't know why he doesn't save it ~ he just keeps texting me to ask me to email it. This was my mom's recipe, complete with the Ozark redneck/hillbilly way of making sure it turns out every time!

Ingredients:
2 cups sugar
1/4 cup butter (or 1/2 stick butter)
1/4 cup cocoa
1/2 cup milk
2 cups oats
1/2 cup peanut butter ~ plus some (I round off my peanut butter, so I'm actually using quite a bit more)
1 tsp. vanilla

Mix sugar, butter, cocoa and milk in a heavy saucepan (a thin saucepan can cause scorching). Bring to a rolling boil ~ here's the redneck/hillbilly part of this recipe ~ boil for 1 minute and 30 seconds, preferrably counted as "one-one thousand, two-one thousand, three-one thousand...." all the way to ninety-one thousand ~ sounds silly, but mine turns out great every time doing this.

Remove from burner and add peanut butter (remember to round off your measuring cup when measuring out 1/2 cup!) and oats ~ mix, then add the vanilla and mix some more.

Drop by spoonfuls onto waxed paper ~ or my favorite way, to add an extra buttery taste is to smear butter all over aluminum foil and drop by spoonfuls onto the foil.

Let the cookies set until they cool and enjoy! I like them best when they're still slightly warm.

*******NOTE: I read Prevention Magazines latest article on the top 10 foods to help trim your tummy. Lo and behold, peanut butter and cocoa were on the list! Hmmmmm.......so, that makes these cookies, kinda sorta have some healthy benefits??? Well, I am lactose intolerant and I'm always trying to put soy milk in my recipes, just to see if it works. Tonight, I made half a batch of these cookies using Silk Vanilla Soy milk and Smart Balance Omega 3/Extra Virgin Olive Oil butter - guess what??? IT WORKED!!! They were DELICIOUS! My hubby ate 4 of them before they were even cooled off if that tells you anything!
