Here is a recipe for birthday cake from 1923
Ingredients:
1 cup sifted pastry flour
1 tsp. cream of tartar
1 1/2 cups sugar
12 egg whites
1 tsp. vanilla
Sift pastry flour six times with cream of tarter
Sift sugar six times
Beat the 12 egg whites until stiff and dry ~ add the vanilla
Fold egg whites into sugar and then fold that into flour ~ do not beat, but use the folding motion until smooth
Bake in a "slow" oven for 45 minutes
