This is actually a very good recipe for potatoes! It's easy to make and adds a side dish to your meals that is a welcome difference from the usual - 1923 recipe.
One quart cold boiled potatoes ~ boil and allow to cool off and cut into 'dice' or small squares
3 Tbsp. butter
1/4 of a chopped onion
1 Tbsp. chopped parsley
Salt & Pepper
Saute the onions in the butter until they brown ~ then remove onions
Add the potatoes to the butter
Stir potatoes with a fork, being careful not to break them
When potatoes are hot, add the parsley and put the onions back in with potatoes and cook two minutes longer (parsley can be omitted)
